How can I route only specific traffic via VPN?

I'd like to configure Viscosity to work like this: all traffic goes over the local network by default, but certain sites go over VPN. I know how to configure a specific site to go through VPN, but I don't know how to configure all traffic to go through local network by default.

You can prevent all network traffic going through the VPN connection by default using the instructions at:
