If I close the lid of my MBP while Viscosity is connected to a VPN, when I open the lid, wi-fi is turned off.
Turning wifi back on (while Viscosity is still running) results in failure to connect to wifi. Repeated attempts to connect to wifi fail.

It sounds like the “Reset network interfaces on disconnect” option may be enabled under Preferences->Advanced. I recommend you un-tick this option, as it’s likely not required. Please see:
